Apple Muffins!

Dustin & I went Apple Picking at Simmons Farm a few weeks ago. It was a beautiful afternoon and per usual we enjoyed time with each other. We were a little confused that a peck of apples meant about 40-50 apples, so we had lots of baking and eating to do.



I stumbled upon this recipe and have made it 4 times since then. These muffins are absolutely to die for. Not to mention they are relatively simple for a made-from-scratch recipe. :) Warning - you may not be able to control yourself once you start eating them! Dustin is not a sweets person and he loved them, so that says a lot!

Apple Muffins!

Ingredients
  • 1  1/2 cups sugar
  • 2 eggs
  • 1 cup oil
  • 1 Tablespoon vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 cups peeled, cored, diced apples (around 3-4 apples) : a little more will not hurt here!
  • Brown sugar for topping (around 1/2 cup)
Instructions
  1. Preheat oven to 350 degrees and line muffin pan with paper liners.
  2. Cream together sugar, eggs, oil, and vanilla. Sift flour, baking soda, salt, and ground cinnamon (I don't usually sift, but it makes a difference with these!) Add dry ingredients to creamed mixture and mix until combined. The batter will be very thick. Add the diced apples.
  3. Fill paper liners almost to the top, about 3/4 of the way full. Sprinkle with brown sugar.
  4. Bake at 350 degrees for 20-24 minutes. Makes 20+ muffins.
