Crockpot Chicken Tortilla Soup

YUM! We are typically hearty soup people- Chili, Potato, etc. However, this healthy chicken tortilla soup I found on Pinterest was SO good! And filling! I have already had 4 bowls. Whoops. What makes me feel a bit better is that is is relatively healthy. Toss it all in the crockpot in the AM and enjoy a delicious, warm bowl for dinner!


Crockpot Chicken Tortilla Soup



Ingredients
-1 Box (32oz.) Chicken Broth
-1 Can (14.5 oz.) petite diced tomatoes, in juice
-1 small/medium onion, diced
-1.5 T garlic
-1 T Chili Powder
-1 T Cumin
-1 t Paprika
-Salt and Pepper, to taste
-1 to 1.5 lbs. Chicken breast
-1 Can (14.5oz.) Black Beans, drained and rinsed
-1.5 Cups Sweet Frozen Corn
-1 T fresh Lime or Lemon Juice
-1/4 to 1/3 Cup chopped Cilantro
-Tortilla strips, Shredded cheese, and any other toppings you would like



Instructions
1. Add chicken broth, tomatoes, onion, garlic, chili powder, cumin, paprika, salt and pepper, and chicken to your crockpot. Mix together.
2. Cover the crockpot with lid and cook on low for 6 hours.
3. 30 minutes to 1 hour before eating, remove and shred chicken. In my experience the chicken is pretty easy to shred so I don't typically even remove it from the crockpot.
4. Add in beans, corn, cilantro, and lemon/lime juice. Stir
5. Let sit on Low for another 30-minutes to 1 hour.
6. Serve warm with tortilla strips, shredded cheese, and any other toppings!
