PB&J Bars

Our sweet friends introduced us to these YUMMY bars. Dessert? Breakfast? Lunch? You name it and these seem to fit the bill. They are easy to whip up and you probably have everything in your pantry/fridge already. I adapted the original recipe to this one. Hope you enjoy!



PB&J Bars

Ingredients
-1 box White Cake Mix (I am impartial to Pilsbury)
-2 eggs
-1/3 cup oil (vegetable or canola)
-3/4 cup crunchy peanut butter
-3/4 cup GOOD jelly or jam
-3/4 cup rolled oats (instant or regular)
-1/2 cup regular peanut butter

Directions
1. Preheat oven to 350*.
2. Mix cake mix, eggs, oil, and crunchy PB together.
3. Place all but 3/4 ish of a cup of the mixture into an 8x8 baking pan lined with parchment paper. I use my hands/fingers to distribute the mix evenly.
4. Spread the jelly/jam over the first layer of PB goodness. (Optionally you could place some fresh cut fruit here as well!)
5. Mix the remaining mixture with the rolled oats and regular PB (it will be more crumby then the first mix)
6. Sprinkle the crumby mix over the jelly.
7. Bake at 350* for 25-30 minutes or until bottom layer is slightly brown.
8. Let cool, cut and enjoy.

I prefer to serve these cold with a nice glass of milk!

Distribute the crunchy PB mix evenly around the pan.
Spread the jelly evenly
Mix in oats and more PB for the topping
Bake the yummy goodness!
