Candy Cane Snowball Cookies

One of our favorite holiday cookies are these yummy Candy Cane Snowballs. They have a cake-mix base with a minty crunch. I adapted an original recipe I found to be a bit simpler with my cake mix cookies. It is my go to cookie for holiday cookie exchanges and get togethers.

Candy Cane Snowballs

 Ingredients

Cookies
-1 box vanilla cake mix
-1.5 cups flour
-1/2 cup water
-1/2 cup oil
-2 eggs
-1 teaspoon Peppermint extract
-1/2 teaspoon salt
-1/4 cup crushed candy canes

Frosting
-1.5 cups Powdered Sugar
-1 T. Milk
-1/2 teaspoon Peppermint extract
(Really this is a guessing game for how thick you want the frosting!)

Topping
-Additional 1/4 cup crushed candy canes

Directions
1. Preheat oven to 375*.
2. Mix cookie ingredients in a mixer, or by hand. 
3. Scoop out dough and roll into 1-inch cookie balls. Place about 1-2 inches apart from each other on a cookie sheet.
4. Bake cookies for 12 minutes.
5. Let cookies cool.
6. For the frosting: blend powdered sugar, extract, and milk together. Frost (I place the frosting in a ziplock bag, cut off the tip, and use it to make a circle on the top of each cookie or a drizzle across). Sprinkle the candy canes on immediately. Let frosting harden for a few hours before storing cookies, or just eat them all immediately and you'll have no problem storing them!
